Noguchi Muroka Nama Genshu Honjozo Sake (BTL 720ml) rice Aging: 3 months acoustic agedThis is is unlike any honjozo (sake with distilled alcohol added, which tend to be silky and light), we've tasted before. That may be because we also rarely see honjozos that are nama muroka genshus (unpasteurized, un charcoal filtered, undiluted). It's fully layered with grapefruit and pear on the nose. The taste is also complex and rich, with earthy and vegetal hints of enoki mushroom and a dry finish reminiscent of goya, or bitter melon. Enjoy this
